Rinse and repeat.
Before you start brewing, place your filter paper into the coffee filter and rinse it with hot water. This will rinse out the paper residue (which will woody taste your filter is sealed and the material of your hand filter is warmed up. The warming up process keeps the brewing temperature stable.
Grind correctly.
When it comes to grinding, there are three main elements: when, how and which coffee grind size .
Grinding immediately before brewing is important because fresh coffee begins to oxidize and age more quickly when ground.
Grinding your coffee at the correct setting is also important – the size of the ground particles affects the extraction, so it is important to set this for your brewing method. We have here a basic guide to grinding.
If all else fails, you don't have a good grinder at home, or your grinder isn't set up properly, ask your barista at our Coffee Pirates cafe or another local specialty cafe to grind your coffee for you for your brewing method . Specify exactly what type of filter you are using. If you already have a grinder, use this ground coffee as a template to calibrate your grinder accordingly. Tip: The best way to compare particle size is to place ground coffee on a white sheet of paper.

Perfect your coffee brew.
The first casting is called the bloom casting. The blooming glaze soaks the entire coffee grounds and ensures an even extraction later. Pour about twice the amount of water into the coffee and stir gently. This should take between 30 and 45 seconds.

Only clean water for your coffee.
Do not use water to make coffee that you would not drink. Clean water = clean coffee. You should heat the water to 92-96 degrees or use it about 30-60 seconds after boiling.
Then you have reached the optimal brewing temperature . Every degree difference affects the taste of the coffee .
Coffee ratio
Using an even water-coffee ratio will help you with the dosage. Then you can adjust the taste. As a general rule, we recommend a coffee to water weight ratio of about 1:17. In other words, for the Chemex we use 42 grams of coffee and about 700 grams of water.
And finally : Make your individual adjustments now! If your coffee tastes weak or sour, you should adjust the grind to make it finer. If it tastes too bitter, adjust the grind setting a little coarser.
