French Press

background

French press coffee is dense and heavy, but has its own elegance. As with any method, the devil is in the details: To get the full expression of the coffee, decant it immediately after brewing to avoid it becoming bitter or chalky. Then enjoy that rich and heady cup. Brewing takes just four minutes.

Step 1
Boil enough water to completely fill the French press. For a 3-cup press, you will need about 350 grams.

step 2
While the water is heating, grind your coffee. French press coffee requires a coarse, even grind. We recommend starting with a coffee to water ratio of 1:12. If you use 350 grams of water, you will need 30 grams of coffee.

step 3
To start, carefully pour twice the amount of water onto your ground coffee. For example, if you have 30 grams of coffee, you should start with 60 grams of water.

Step 4
Gently stir the base with a bamboo spatula or chopstick. Allow the coffee to bloom for 30 seconds.

Step 5
Pour in the remaining water and carefully place the lid on the rim of the pot. Don't press down yet. Let the coffee brew for four minutes. Four . Don't estimate.

Step 6
Carefully remove your French press from the scale and place it on your counter. Push the filter down. If it's hard to push, that means your grind is too fine; if the plunger immediately "pops" to the bottom, that means your grind is too coarse. The sweet spot is 15-20 pounds of pressure. Not sure how that feels? Try it on your bathroom scale.

When you're done pressing, serve the coffee immediately. Do not leave it standing, otherwise the coffee will continue to brew and over-extract.

Drink it. Quickly!

Tip: You can also pour the coffee into another container!
