How is coffee gently roasted in a drum roaster?

In the drum roaster, coffee is gently roasted through the use of heat and movement. The coffee is placed in a rotating drum that rotates over a heat source. The movement in the drum heats and roasts the coffee evenly. An important factor in gentle roasting in the drum roaster is controlling the heat and air circulation. Which coffees are suitable for filter coffee?

Medium to high quality Arabica beans are generally suitable for filter coffee. Compared to Robusta beans, Arabica beans have a higher acid content, a finer aroma and a more subtle taste. They are generally milder and less bitter than Robusta beans and are therefore better suited for making filter coffee.

Arabica beans that come from high-quality growing areas, such as Central America, South America or Africa, usually have a more pronounced aroma and higher acidity than beans from lower-quality growing areas.

There are also special varieties of Arabica beans that are particularly suitable for filter coffee, such as the Bourbon variety, which has a mild aroma and a sweet taste. Other varieties such as the Typica and the Gesha are also very popular for filter coffee.

It is also possible to use a mixture of Arabica and Robusta beans for filter coffee, but Arabica should dominate to achieve a balanced aroma and taste.

The perfect espresso roast

Medium to high quality Arabica and Robusta beans are generally suitable for making espresso. A good espresso blend usually consists of a combination of Arabica and Robusta beans, as they complement each other.

Compared to Arabica beans, Robusta beans have a higher caffeine content, a higher crema formation and a stronger taste. They give the espresso more body and roasted aromas.

Arabica beans, on the other hand, have a higher acidity, a finer aroma and a more subtle taste. They give the espresso more finesse and aromas.

A good espresso blend usually consists of 60-70% Arabica beans and 30-40% Robusta beans. There are also special varieties of Arabica and Robusta beans that have been specially bred for espresso, such as the Maragogype, Bourbon, Caturra and Catuai varieties, which are particularly suitable for espresso.

It is important to note that the beans for espresso must be ground very finely to achieve optimal extraction. It is also important to ensure that the beans are freshly roasted to preserve the full aroma and flavor of the espresso.
